White Bean Hummus
Preheat oven to 400°F. Cut the pointed tip from the head of garlic, leaving bulb intact but exposing individual cloves. Remove any loose papery covering. Place garlic head, cut side up, in a 6-ounce custard cup. Drizzle with 1 teaspoon oil. Cover and bake 20 to 25 minutes or until soft; let cool.Advertisement
When cool enough to handle, squeeze softened garlic into a food processor or blender. Add next four ingredients (through salt). Cover and process until smooth. Transfer to a serving bowl. If desired, top with roasted tomatoes and/or rosemary.
