  • Place sugar and water in a blender and let stand for about 5 minutes, to soften sugar.

  • Add watermelon and lemon juice to blender. Blend until smooth. Pass the mixture through a fine-mesh strainer, gently pressing pulp with the back of a spoon to squeeze out liquid. Divide mixture among 8 to 10 3-ounce pop molds. Insert sticks and freeze overnight.

Prep note

If you don't have molds, pour the mixture into 3-ounce paper cups, cover them with heavy-duty foil (or a double layer of foil), then insert wooden sticks and freeze. Tear off the paper and foil, then slurp away.
