In a medium saucepan, cook potatoes, covered, in lightly salted, boiling water for 13 to 15 minutes or until just tender. Don't overcook. Drain potatoes.
Coat a 15x10x1-inch baking pan with nonstick cooking spray. Place potatoes on prepared pan. Drizzle with walnut oil; sprinkle lightly with kosher salt, if you like. Toss to coat.
Bake in a 450 degree F oven for 10 minutes; stir potatoes and bake about 10 minutes more or until golden. Remove from oven; sprinkle with rosemary or parsley and chopped nuts. Makes 4 to 6 side-dish servings.
