Wash and peel potatoes. Cut into quarters or large cubes. Cook, covered, in a small amount of boiling water for 20 to 25 minutes or until tender; drain. Mash with a potato masher or beat with an electric mixer on low speed.
In a small saucepan, heat butter and half-and-half until butter is melted. Add to potatoes with the seasonings.
Mash or beat on low speed until potatoes are light and fluffy. If necessary, add more half-and-half, 1 tablespoon at a time, until potatoes are consistency you like. Makes 8 to 10 side-dish servings.
