In a large bowl, combine okra, summer squash, cabbage, eggplant, tomatoes, sweet pepper, onion, garlic, salt, and black pepper. Toss to combine.
In a 12-inch skillet, heat bacon drippings or shortening until hot. Add vegetables. Cook over medium heat for about 10 minutes, turning frequently, until crisp-tender. Makes 8 side-dish servings.
Use plastic gloves when seeding and chopping chili peppers.
