Peel the sweet potatoes and thinly slice (you'll have about 3 cups).
In a large skillet, melt butter or margarine. Add potatoes, pancetta or ham, shallots, and parsley. Sprinkle with pepper.
Cook, uncovered, over medium heat for 8 to 10 minutes or until the potatoes are tender and beginning to brown, stirring gently occasionally. Makes 4 to 6 side-dish servings.
