• Cook whole potatoes in lightly salted boiling water for 15 minutes. Drain; rinse in cold water. Drain. Halve or quarter large potatoes.

  • In a shallow dish, combine cornmeal, flour, and oat bran. Add Parmesan cheese, parsley, paprika, and dill.

  • In another shallow dish, whisk together egg white and milk. Lightly coat a 12x7x2-inch baking dish with nonstick cooking spray.

  • Dip potatoes in egg-white mixture; dip into flour mixture. Place in prepared baking dish; drizzle with butter.

  • Cover and bake in a 400 degree F oven for 10 minutes. Uncover; bake for 10 minutes more or until potatoes are tender. Makes 4 or 5 side-dish servings.
