Scrub sweet potatoes thoroughly with a brush and pat dry. Prick potatoes with a fork. Bake in a 425 degree F oven for 40 to 60 minutes or until potatoes are tender.
For sauce, melt butter in a small saucepan. Stir in brown sugar and whipping cream. Cook, uncovered, over medium heat for 5 minutes, stirring constantly.
Serve the sauce warm over the whole baked sweet potatoes. Sprinkle with pecans, if you like. Makes 8 side-dish servings.
Toast pecans by spreading nuts in a single layer in a shallow baking pan. Bake in a 350 degree F oven for 5 to 10 minutes or until toasted, watching carefully and stirring once or twice.
