This 15-minute DIY version of a soda-shop favorite puts the butter back in butterscotch. Just add toasted pecans or smoked almonds for a killer sundae.




  • In a medium saucepan combine brown sugar and cornstarch. Stir in half-and-half; add all but 7 tablespoons butter. Cook and stir over medium heat until thickened and bubbly (mixture may look curdled). Cook and stir for 2 minutes more. Remove from heat. Stir in remaining 1 tablespoon butter and vanilla.



Chill leftovers, covered for up to 1 week. Reheat if desired. Place any leftovers in a small microwave-safe bowl. Microwave on 100% (high) power for 30 to 45 seconds or until just warm, stirring once.
