Toasted Pizza Wraps
Preheat oven to 400°F. In a medium skillet, heat olive oil over medium heat. Add turkey sausage and cook until no pink remains, breaking up any large pieces. Add mushrooms; cook about 3 minutes or until mushrooms are tender. Stir in ¼ cup of the sauce.Advertisement
Arrange tortillas on a work surface. Sprinkle 1/2 cup cheese over each. Spoon 1/2 cup of sausage mixture on center; top with 1/4 cup spinach. Fold in sides and roll up (burrito-style) and place seam-side-down, on a baking sheet. Bake for 6 to 8 minutes, or until crisp and lightly browned. Cool wraps slightly before cutting in half to serve with remaining sauce.
If desired, add your favorite pizza toppers to the wraps: sliced sweet peppers, sliced or chopped pepperoni, olives, or onion slices.
Instead of spinach in the wraps, try beet greens, arugula, shredded kale or chard.
