  • Preheat oven to 400°F. In a medium skillet, heat olive oil over medium heat. Add turkey sausage and cook until no pink remains, breaking up any large pieces. Add mushrooms; cook about 3 minutes or until mushrooms are tender. Stir in ¼ cup of the sauce.

  • Arrange tortillas on a work surface. Sprinkle 1/2 cup cheese over each. Spoon 1/2 cup of sausage mixture on center; top with 1/4 cup spinach. Fold in sides and roll up (burrito-style) and place seam-side-down, on a baking sheet. Bake for 6 to 8 minutes, or until crisp and lightly browned. Cool wraps slightly before cutting in half to serve with remaining sauce.

Additional Toppers

If desired, add your favorite pizza toppers to the wraps: sliced sweet peppers, sliced or chopped pepperoni, olives, or onion slices.

Other greens

Instead of spinach in the wraps, try beet greens, arugula, shredded kale or chard.

Light antipasto salad

Build an antipasto salad using healthful ingredients tossed in a light Caesar dressing. Choose from torn romaine, grape tomatoes, avocado, chickpeas, cucumber, Kalamata olives, broccoli florets and peperoncini.
