Inspired by the Tex-Mex dish called migas, this ridiculously easy breakfast (or breakfast-for-dinner) dish can be on the table in less than 15 minutes.




  • In a medium bowl, whisk together eggs, milk, salt and pepper. In a large skillet, heat the oil over medium heat. Add egg mixture and cook, without stirring, until mixture begins to set around edges and on bottom.

  • Cook for 2 to 3 minutes more, gently folding with a spatula, until egg mixture is nearly set. Stir in chips and salsa. Cook and gently stir 1 minute more or until eggs are set but still glossy and moist. Top with cheese and cilantro and serve.
