Press the dough into a 14-inch circle on a baking sheet. Spread 1/2 cup peanut sauce evenly over dough. Top with chicken and mozzarella cheese.
Bake in a 500°F oven for 12 to 15 minutes or until cheese is melted and crust is golden brown.
Top baked pizza with shredded carrot, snow peas, green onions and cilantro. If you like, drizzle with the remaining 1/4 cup peanut sauce.
