  • In a heavy small saucepan, combine the 1 cup half-and-half and honey. Bring mixture to a simmer, stirring often, over medium heat; reduce heat to low. Add chocolate and whisk until mixture is smooth and chocolate is melted. Remove from heat. Whisk in the amaretto.

  • Transfer chocolate mixture to a fondue pot and keep warm over a fondue burner; stir occasionally. (Or use a 1- or 1 1/2-quart slow cooker and keep warm for up to 2 hours on low-heat setting.)

  • Serve fondue with desired dippers. Spear a dipper with a fondue fork or wooden skewer; dip into chocolate mixture, swirling to coat. (If the fondue mixture thickens, stir in a little additional half-and-half to thin as needed.)
