  • Line an 8x8x2-inch baking pan with foil, leaving 1 inch of foil hanging over edges. Coat with cooking spray; set aside. In a large microwave-safe mixing bowl combine the chocolate, butter and the water. Microwave, uncovered, on 100% power (high) for 1 minute, stirring after 30 seconds. Remove and stir until smooth.

  • Add granulated sugar and brown sugar; stir to combine. Add eggs and vanilla; stir to combine. Stir in flour, ground almonds, cardamom and salt until smooth. Spoon batter into prepared pan.

  • Bake in a 350° oven for 30 minutes or until edges are set and start to pull away from the sides of the pan. Cool brownies in pan on a wire rack. Use foil to lift uncut brownie from pan; remove foil. If desired, lay a snowflake stencil over brownies. Sift powdered sugar over stencil. Carefully remove the stencil. Cut into squares to serve.

Toasting Nuts

Place nuts on a shallow baking pan. Bake in a 350° oven for 5 to 10 minutes, stirring once or twice, until aromatic. Cool. In a blender or food processor, grind the nuts using several on/off pulses, being careful not to overprocess them.
