  • In a 3-quart saucepan, heat olive oil over medium-high heat. Add chicken sausage, onion, celery. Cook until sausage is browned and onion and celery are tender, about 5 minutes.

  • Add sweet potatoes, chicken broth, apple cider, sage, thyme, salt, and pepper. Bring to a boil. Reduce heat and simmer until sweet potatoes are tender, 10 to 12 minutes. Stir in spinach; cook 5 minutes more.
