  • Wash beans; remove ends and strings. Cook, covered, in a small amount of boiling salted water for 10 to 15 minutes or until crisp-tender. Drain. Immediately place beans in a large bowl of ice water. Let stand 3 to 4 minutes or until beans are cooled; drain. Pat dry with paper towels. Transfer beans to a medium bowl; cover and chill for at least 30 minutes.

For dressing:
  • In a screw-top jar, combine lemon juice, oil, garlic, salt and pepper. Cover and shake well; set aside.

  • Just before serving, shake dressing well and immediately drizzle over beans. Add cheese; toss to coat. To serve, arrange beans on a shallow serving platter. Makes 4 to 6 side-dish servings.

Tips

The beans can be cooked and chilled up to 24 hours ahead. You can also make the dressing and store in the refrigerator up to 24 hours ahead.
