Ingredients

  • 3 tablespoons Basil Vinegar (see recipe below) or other herb vinegar
  • 1 tablespoon snipped fresh basil or other herb
  • 1 tablespoon orange juice
  • 1 teaspoon Dijon-style mustard
  • 1/4 cup olive oil
  • Arugula, leaf lettuce, or other salad greens
  • 3 medium oranges, peeled and sliced crosswise
  • 1 small red onion, coarsely chopped
  • Snipped chives
  • Pepper

Directions

  1. For vinaigrette dressing, in a blender container, combine Basil Vinegar, basil, orange juice, and mustard. Cover and blend well.
  2. With motor running, pour olive oil through top of blender container. Blend until well mixed. Transfer to a non-metal container. Cover and chill, if you like.
  3. For salad, line platter or individual plates with greens. Overlap orange slices on greens. Sprinkle onion over fruit. Drizzle with vinaigrette. Sprinkle chives and pepper over salad. Makes 4 side-dish servings.

Basil Vinegar

Ingredients

  • 2 cups white vinegar or white wine vinegar
  • 1 cup fresh basil

Directions

  1. In a non-metal container, place white vinegar or white wine vinegar and fresh basil. Cover and let stand in a cool, dark place for 24 hours.
