We added sweet pears to a corn and sweet pepper salsa to make this appetizer. Serve with tortilla chips or pita chips.
In a medium glass or plastic bowl (not metal), combine pears, tomatoes, sweet pepper, onion, corn, cilantro, vinegar, catsup, Old Bay seasoning, garlic, mustard, and thyme.
Cover and chill in the refrigerator for 2 to 8 hours. Serve with blue corn chips and/or pita wedges. Makes about 3 cups salsa (twelve 1/4-cup servings).
