  • In a large nonstick skillet heat oil over medium heat. Add sausage; cook until lightly browned, stirring occasionally. Add the remaining ingredients except rice and green onions. Cook, covered, 10 minutes. Uncover; simmer about 5 minutes more or until slightly thickened. Discard bay leaf. Serve bean mixture over hot cooked rice. If desired, sprinkle with green onions.
