In a large bowl, stir together flour, sugar, baking powder, and salt.
Cut in butter until mixture resembles coarse crumbs.
Break eggs into a bowl, setting aside about 1 tablespoon egg white. Beat remaining eggs with half-and-half or light cream. Add to flour mixture. Stir until just moistened.
On a lightly floured surface, gently knead dough 10 to 12 times. Roll or pat dough to 3/4-inch thickness. Cut dough into desired shapes with a 2-1/2-inch biscuit cutter. Re-roll as necessary. Place on ungreased baking sheet. Brush with the reserved 1 tablespoon egg white.
Bake in a 400 degree F oven for 12 to 15 minutes or until lightly browned. Serve with preserves or jam. Makes 6 scones.
