  • Preheat oven to 450°. In a bowl, combine mayonnaise, lemon zest and juice, garlic, chives, tarragon, parsley and sugar. Season mixture to taste with salt and pepper.

  • Place salmon on a foil-lined baking sheet. Measure thickness of fish. Season with salt and pepper. Spread 1/4 cup sauce over top of salmon. Roast 4 to 6 minutes per 1/2-inch thickness of fish until fish just flakes when tested with a fork. Let rest 5 minutes.

  • Thin remaining sauce to desired consistency with a teaspoon or so of water. Serve salmon with sauce on the side. If desired, garnish with several thin lemon slices or a scattering of parsley leaves.
