In a blender container, combine all the ingredients except the chicken. Cover and blend until nearly smooth.
Rub all surfaces of the chicken with the herb mixture.
Place chicken pieces, bone sides up, on the rack of an uncovered grill directly over medium coals.* Grill for 35 to 45 minutes or until tender and no longer pink, turning pieces over halfway through cooking. (Or to bake chicken, arrange pieces in a 13x9x2-inch baking pan or dish. Bake in a 375 degree F oven for 45 to 55 minutes or until tender and no longer pink. Don't turn pieces.) Makes 4 servings.
To test for medium heat, you should be able to hold your hand over the heat at food height for 4 seconds.
