  • In a plastic bag, combine the flour, Italian seasoning, salt, garlic powder, and pepper. Add chicken pieces, a few at a time, shaking to coat well.

  • In a 12-inch skillet, heat 1 inch of oil. Add chicken, placing meaty pieces toward the center of the skillet. Cook, uncovered, over medium heat for 15 minutes, turning to brown evenly.

  • Reduce the heat and cover the skillet tightly. Cook for 25 minutes. Uncover skillet and cook for 5 to 10 minutes more or until the chicken is tender and no longer pink. Drain chicken on paper towels. Makes 4 to 6 servings.
