In a plastic bag, combine the flour, Italian seasoning, salt, garlic powder, and pepper. Add chicken pieces, a few at a time, shaking to coat well.
In a 12-inch skillet, heat 1 inch of oil. Add chicken, placing meaty pieces toward the center of the skillet. Cook, uncovered, over medium heat for 15 minutes, turning to brown evenly.
Reduce the heat and cover the skillet tightly. Cook for 25 minutes. Uncover skillet and cook for 5 to 10 minutes more or until the chicken is tender and no longer pink. Drain chicken on paper towels. Makes 4 to 6 servings.
