In a large bowl, combine chicken, pineapple, and celery.
In a small bowl, stir together mayonnaise or salad dressing, onion, cardamom or cinnamon, salt, and sugar. Fold into the chicken mixture. Cover and chill the mixture for 1 to 4 hours.
To serve, split the pastry puffs and fill them with the chicken mixture. Makes 5 cups.
