Speedy Microwave Potatoes (see recipe below)
shredded mozarella cheese (3 ounces)
Grated Parmesan cheese (optional)
In a microwave-safe 2-cup measuring cup, combine pizza sauce and pepperoni. Cover with vented microwave-safe plastic wrap.
Microcook on 100 percent power (high) for 3 to 4 minutes or until heated through, stirring after 2 minutes.
Spoon over Speedy Microwave Potatoes. Sprinkle with mozzarella and Parmesan, if you like. Return to oven. Microcook for 2 to 3 minutes more or until the cheeses melt. Makes 4 servings.
Speedy Microwave Potatoes
oval-shaped baking potatoes (about 2 pounds total).
- Scrub baking potatoes. Pierce with a fork. Arrange about 1 inch apart on a large microwave-safe plate. Microcook on 100 percent power (high) for 12 to 18 minutes or until tender, turning potatoes after 6 minutes. Remove from oven. Cover potatoes with foil; let stand for 6 minutes. Using a sharp knife, cut an "X" into top of each potato.
