Florentine-style dishes have one thing in common: heart-healthy spinach. In this case, the leafy greens combine with chunks of ham in a chowderlike soup. For best results, remove spinach stems before cooking.




  • In a medium saucepan, combine the 1 1/2 cups water, the carrot, onion, green sweet pepper, celery, bouillon granules and pepper. Bring to boiling. Reduce heat; simmer, covered, for 10 minutes. Don’t drain.

  • In a large saucepan, melt the butter. Stir in flour. Add milk and the 1 cup water. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more.

  • Add the vegetable mixture and ham to the milk mixture. Heat through. Stir in the spinach. Serve immediately.
