  • Preheat oven to 400°. Coat a rimmed baking pan with cooking spray. Season tenderloin with salt and pepper. Place in pan. Add pears, potatoes and onion.

  • In a bowl, whisk together olive oil, vinegar, the lemon zest and juice, maple syrup, garlic, thyme and 1/2 teaspoon each additional salt and pepper. Pour over all ingredients in pan and toss to coat. Bake until pork reaches 145°, 30 to 35 minutes. Let rest 5 minutes before slicing. Garnish with additional fresh thyme.
