  • In a medium skillet, cook the garlic in olive oil for 10 to 30 seconds or until tender. Stir in the tomatoes, basil, parsley, salt, and pepper. Cover and cook about 5 minutes or until the tomatoes are very tender.

  • Toss tomato mixture and the 1/4 cup Pecorino Romano or Parmesan cheese with spaghetti. Transfer to 2 serving bowls. Garnish each with additional Romano or Parmesan cheese and a slice of bread. Makes 2 servings.
