Put aside that bottled raspberry vinaigrette and try this amazing homemade alternative, flavored with maple syrup, Dijon mustard and toasted pecans. It's fantastic on a salad with apples or pears, goat cheese and leftover holiday turkey.
In a blender or food processor, combine cranberries, pecans, vinegar, maple syrup, mustard, salt and pepper. Cover and blend or process until nearly smooth. With the machine running, drizzle in the oil until combined. Store, covered, in the refrigerator up to 1 week. Stir before serving.
Great for any mixed greens salad, especially with apple or pears and chevre.
