  • In a large skillet, melt butter over medium heat. Add mushrooms, garlic and thyme. Cook until tender, about 5 minutes. In a bowl, combine ricotta, mozzarella, and pepper.

  • Preheat oven to 500°. On a lightly floured surface, roll or stretch dough into a 12-inch circle. Transfer to a baking sheet dusted with cornmeal. Prick evenly with a fork. Bake 5 minutes.

  • Spread ricotta mixture over crust. Sprinkle with smoked paprika. Top with mushroom mixture. Bake until crust is golden, about 10 minutes. Top with arugula. Drizzle with olive oil and sprinkle with salt.
