In a medium mixing bowl stir together flour, cornmeal, sugar, baking powder, salt, and red pepper. In another bowl beat together eggs, milk, and melted butter. Add to flour mixture. Add the 1 cup shredded cheese and stir just until batter is smooth (do not overmix).
Spoon batter into greased muffin cups, filling cups almost full. Top with desired toppings. Bake in a 425 degree F oven for 12 to 15 minutes or until golden brown. Let cool in pan for 5 minutes. Remove from muffin cups and serve warm. Makes 12.
