  • Trim fat from steak. Score steak by making shallow cuts at 1-inch intervals diagonally across meat in a diamond pattern. Repeat on second side. Using a meat mallet and working from center to edge, pound steak into a 1/4-inch-thick rectangle about 12x9 inches.

  • Arrange cheese slices on steak. Sprinkle with ham and chili peppers.

  • Beginning at a short end, roll up steak into a spiral. Secure with wooden toothpicks. Pat flour into meat roll. In a large skillet, brown meat roll on all sides in 1 tablespoon hot oil. Place the browned meat roll in a shallow baking pan.

  • Bake, covered, in a 350 degree F oven for 20 minutes. Uncover and bake about 20 minutes more or until done (160 degree F). Top with additional sliced cheese, if you like. Let stand for 10 minutes. To serve, slice roll crosswise. Makes 4 servings.
