  • For basting sauce, in a small bowl, stir together olive oil, soy sauce, lemon juice, liquid smoke, and vinegar.

  • In a covered grill, arrange medium-hot coals around a drip pan. Test for medium* heat above pan. Place ribs on grill rack over drip pan, but not over coals. Brush with basting sauce.

  • Lower grill hood. Grill ribs about 1 hour or until tender, turning and brushing the ribs with the basting sauce every 15 minutes. Brush the meat with your own choice of barbecue sauce during the last few minutes of cooking, if you like. Makes 4 servings.

To test for medium heat, you should be able to hold your hand over the drip pan at food height for 4 seconds before you have to pull away.
