Coat a large oven-going skillet with cooking spray. Trim fat from chops. In a skillet, brown chops on both sides over medium heat. Remove chops from skillet.
Add sweet potatoes, onion, and orange juice to skillet. Bring the mixture to boiling.
Stir in apple, syrup, raisins, and cinnamon. Top with chops; sprinkle with salt and pepper. Cover and bake in a 350 degree F oven about 35 minutes or until pork chop juices run clear. Makes 4 servings.
