In a bowl, mix the apricots, figs, cranberries, and garlic. Untie roast. On a work surface, place one half of meat, flat side up. Spoon fruit mixture onto roast. Top with remaining half. Retie roast.
In a small bowl, combine thyme, salt, and pepper. Rub onto roast. Place meat on a rack in a shallow roasting pan. Insert a meat thermometer. If you're using the onions, arrange around meat.
Roast in a 350 degree F oven 1-1/2 to 2 hours or until meat thermometer registers 160 degree F, brushing with pan juices occasionally.
Remove from oven; cover and let stand 10 minutes or until thermometer registers 160 degree F. Place on warm serving platter. Garnish with onions or fresh fruit and herbs. Makes 10 to 12 servings.
