Lemon and grapes brighten the fresh green bean, broccoli and mushroom mixture.
In a 15x10x1-inch baking pan, toss together green beans, broccoli, mushrooms, grapes, garlic, olive oil, salt and pepper. Spread in an even layer. Roast in a 425° F oven for 20 to 25 minutes or until tender and lightly browned, stirring halfway through. To serve, stir in lemon juice, lemon zest and, if you like, fresh thyme.
