  • In a charcoal grill, arrange medium coals around a drip pan. Test for medium-low heat above the pan. Sprinkle half of the drained wood chips over the coals. Place meat on the grill rack over drip pan. Cover and smoke until meat thermometer registers 140 degree F for medium-rare (1-1/2 to 2 hours) or 155 degree F for medium doneness (1-3/4 to 2-1/4 hours). Add more coals and wood chips as needed.
