Frozen peaches, almond extract, and dark rum make up this decadent ice cream topper.
In a food processor or blender, combine peach slices, rum or peach nectar, corn syrup (if using) and almond extract. Cover and process or blend until almost smooth.
To serve, scoop ice cream into 8 chilled dessert dishes or parfait glasses. Pour peach sauce over ice cream. Top with crushed peanut brittle. If you like, serve with additional whole pieces of peanut brittle on the side.
