Hummus makes an unexpected but tasty partner with sweet potatoes for this vegetarian main dish. Sesame oil, toasted sesame seeds and broccoli add flavor and texture.




  • Prick sweet potatoes 5 or 6 times with a fork. On a microwave-safe plate, cook potatoes on high power for 8 to 10 minutes or until tender. (Or, place on a foil-lined baking sheet. Bake in a 425°F. for 45 minutes.)

  • Cook broccoli with water in a microwave-safe bowl, covered, for 2 to 3 minutes or until just tender; drain.

  • Slit potatoes lengthwise, cutting halfway through. Scoop flesh into bowl and mash with hummus, lemon juice and sesame oil. Stir in broccoli.

  • Refill skins and microwave 1 to 2 minutes to heat through. Top with toasted sesame seed.
