  • In a medium bowl combine yogurt, honey, and grapefruit peel. Gently fold in grapefruit pieces. Spread in a 2-qt baking dish. Cover and freeze 1 hour. Stir mixture. Cover and stir again every 30 minutes until nearly firm. Sprinkle with almonds. Cover and freeze until completely firm. If needed, let stand 10 minutes at room temperature before serving.

If you like, omit the honey and use vanilla Greek yogurt instead of plain.

*To Section a Grapefruit

For pretty, membrane-free segments, start by slicing off the top and bottom of the grapefruit so it's flat on both ends. Set the fruit on a cutting board to trim off remaining peel and pith. You should be left with a "naked" fruit. Working over a bowl to catch slices, slice out one segment at a time, working your way around, folding over empty membranes like pages of a book.
