  • Preheat oven to 350°F. Line a 13x9-inch baking pan with foil, extending foil over edges of pan. Lightly coat foil with cooking spray. Remove 1 teaspoon zest and squeeze 1/4 cup juice from orange. In a bowl combine orange zest and juice, brown sugar, and lemon juice. Stir in dates.

  • In a bowl stir together next six ingredients (through salt). In another bowl combine remaining ingredients. Add egg mixture to flour mixture. Beat on low to medium until combined, scraping sides of bowl frequently (mixture will be crumbly). Add date mixture; beat until combined. Using moistened hands, spread dough evenly in the prepared pan.

  • Bake 12 to 15 minutes or until top is lightly browned and a toothpick inserted in the center comes out clean. Cool in pan on a wire rack. Cut into bars.

To Store

Wrap bars individually in plastic wrap. Store in the refrigerator up to 3 days or freeze up to 3 months; thaw before eating.
