  • In the top of a double boiler over hot, not boiling water (upper pan should not touch water),combine the wine, sugar, and vanilla. Cook and stir until sugar dissolves.

  • Add the egg yolks and salt. Cook the mixture and beat with an electric mixer for 7 to 9 minutes or until the mixture thickens, mounds, and about triples in volume.

  • Serve warm over fresh fruit. Sprinkle with cinnamon or chocolate. Serve with sweet wafers or butter cookies. Makes 6 servings.
