In the top of a double boiler over hot, not boiling water (upper pan should not touch water),combine the wine, sugar, and vanilla. Cook and stir until sugar dissolves.
Add the egg yolks and salt. Cook the mixture and beat with an electric mixer for 7 to 9 minutes or until the mixture thickens, mounds, and about triples in volume.
Serve warm over fresh fruit. Sprinkle with cinnamon or chocolate. Serve with sweet wafers or butter cookies. Makes 6 servings.
