  • In a medium bowl combine water, sugar, and coconut. Let stand at room temperature, for 10 minutes, stirring occasionally until sugar is dissolved. Stir in watermelon. Cover and chill overnight. Strain through a fine mesh strainer, firmly pressing on the watermelon to remove as much liquid as possible.

  • For each serving, fill a tall glass full of ice. Pour 2 to 3 tablespoons syrup over the ice. Top with seltzer or club soda. Garnish with watermelon pieces. Store any remaining syrup in a screw top jar or covered container for up to 2 weeks.

Blueberry-Ginger Syrup

In a medium bowl, lightly mash 1 cup fresh or frozen blueberries. Stir in 1 cup each sliced fresh ginger, water and sugar. Let stand for 10 minutes, stirring occasionally, until sugar is dissolved. Chill, covered, overnight. Strain.

Citrus-Cilantro Syrup

In a medium bowl, combine 1 cup each water, sugar and snipped fresh cilantro. Let stand for 10 minutes, stirring occasionally, until sugar is dissolved. Stir in 1 cup mixed citrus slices (orange, lemon and/or lime). Chill, covered, overnight. Strain.

Orange-Pineapple Syrup

In a medium bowl, combine 1 cup each water, sugar and chopped pineapple. Let stand 10 minutes, stirring occasionally, until sugar is dissolved. Stir in one sliced orange. Chill, covered, overnight. Strain through a fine-mesh sieve, pressing to squeeze out as much juice as possible.
