  • In a large bowl combine pears, apples, cranberries, 1 cup sugar, 3 tablespoons flour, orange peel, lemon juice and salt. Toss lightly until just combined. Spoon into a 2-quart casserole dish. Bake, uncovered, in a 375 degree F oven for 25 minutes.

  • Meanwhile, in a medium bowl combine 3/4 cup flour, cornmeal, 2 tablespoons sugar, and baking powder. Using a pastry blender, cut butter into flour mixture until butter is pea-size. Combine milk and egg. Add to flour mixture all at once, stirring until just combined. Spoon in 8 or 10 mounds atop fruit mixture.

  • Bake 25 minutes more or until a toothpick inserted near the center of the topping comes out clean. Cool for 30 minutes. Serve warm with ice cream or whipped cream, if you like. Makes 8 to 10 servings.
