  • Using a vegetable peeler, remove the orange zest (colored part) from the peel of the 1 orange, avoiding the bitter white part.

  • In a small saucepan, combine the orange zest, water, and sugar. Bring to boiling, stirring until sugar dissolves; reduce heat. Cover and simmer for 5 minutes. Strain and cool.

  • Add the orange juice and lemon juice. Pour orange juice mixture into an 8x4x2-inch loaf pan. Cover and freeze until firm.

  • To serve, break the frozen mixture into chunks. Place the chunks in a metal bowl. Beat with an electric mixer until the mixture is slushy. (You can refreeze the slushy mixture.) Spoon into Orange Cups, if you like, or spoon into dessert dishes. Garnish with mint. Makes 3 cups (6 servings).

Orange Cups:

Cut 3 oranges into halves. Scoop out pulp with a grapefruit knife or a spoon and save for another time. Using a knife or scissors, cut a saw-toothed or scalloped edge around each orange half.
