In a medium bowl, stir together all ingredients. Refrigerate about 30 minutes or until chilled. For a smooth sauce, process in a blender with 1 to 2 tablespoons of water until smooth .
Makes a great topper to vanilla ice cream especially with the addition of bananas. Turn a simple cheesecake tropical or top banana or coconut cream pie. Simply serve topped with toasted coconut and a side of shortbread cookies. Makes 1-1/2 cups chunky sauce or 3/4 cup pureed sauce.
