Ingredients

  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • Chunky Applesauce (see recipe below)
  • 1/4 cup brandy
  • 24 Mini Crepes (see Recipe Center)
  • 1 tablespoon sugar
  • 1/4 teaspoon ground cinnamon

Directions

  1. For filling, in a small saucepan, combine the 1/4 cup sugar and cornstarch. Stir in Chunky Applesauce and brandy. Cook and stir over medium heat until mixture is thickened and bubbly. Remove from heat.
  2. On each Mini Crepe, spoon a scant 1 tablespoon of the filling along 1 edge of the unbrowned side. Roll up tightly. Place, seam side down, in a greased shallow baking pan. Bake, uncovered, in a 350 degree F oven about 10 minutes or until heated through.
  3. In a small mixing bowl, combine the 1 tablespoon sugar and cinnamon. Sprinkle over the warm crepes. Serve immediately. Makes 24 roll-ups (8 to 12 servings).

Chunky Applesauce

Ingredients

  • 2 - 3 Golden Delicious, Northern Spy, or Mutsu apples (about 1 pound)
  • 2 tablespoons water

Directions

  1. Peel, core, and cut into wedges Golden Delicious, Northern Spy, or Mutsu apples. In a small saucepan, combine apples and water. Bring to boiling; reduce heat. Cover tightly and simmer for 8 to 10 minutes or until tender. Slightly mash apple. Use immediately for roll-ups. Makes 1-1/4 cups.
