For filling, in a small saucepan, combine the 1/4 cup sugar and cornstarch. Stir in Chunky Applesauce and brandy. Cook and stir over medium heat until mixture is thickened and bubbly. Remove from heat.
On each Mini Crepe, spoon a scant 1 tablespoon of the filling along 1 edge of the unbrowned side. Roll up tightly. Place, seam side down, in a greased shallow baking pan. Bake, uncovered, in a 350 degree F oven about 10 minutes or until heated through.
In a small mixing bowl, combine the 1 tablespoon sugar and cinnamon. Sprinkle over the warm crepes. Serve immediately. Makes 24 roll-ups (8 to 12 servings).
Peel, core, and cut into wedges Golden Delicious, Northern Spy, or Mutsu apples. In a small saucepan, combine apples and water. Bring to boiling; reduce heat. Cover tightly and simmer for 8 to 10 minutes or until tender. Slightly mash apple. Use immediately for roll-ups. Makes 1-1/4 cups.
