  • In a bowl, combine mayonnaise, lemon juice, curry powder, garlic powder and smoked paprika.

  • In a large skillet, heat 1 tablespoon of the olive oil over medium-high; toss in cauliflower florets and salt. Cover and cook, stirring occasionally, until softened, about 5 minutes.

  • Spread mayo mixture on all bread slices. Top two slices with 1/4 cup each shredded cheese, a few thin apple slices, the cauliflower, 1 tablespoon honey and another 1/4 cup cheese; top each with one of the other prepared bread slices.

  • Heat the remaining 2 tablespoons olive oil and the butter in a large skillet over medium. Cook sandwiches until golden and melted, 3 minutes per side
