This deliciously pouffy treat is dotted with pecans and coconut.
In a large mixing bowl, beat sugar, butter, shortening and vanilla with an electric mixer till light and fluffy.
By hand, stir in flour and baking soda. Stir in pecans and coconut.
Roll cookie dough into 1-inch balls and place them 2 inches apart on an ungreased cookie sheet.
Bake in a 375 degree F oven for 9 to 10 minutes or till the edges are lightly browned. Transfer the cookies to wire racks to cool. Makes about 48 cookies.
