Ingredients

  • 1/3 cup warm water (105 degree F to 115 degree F)
  • 2 packages active dry yeast
  • 2 tablespoons sugar
  • 1/4 cup milk
  • 2 tablespoons butter or margarine
  • 2 slightly beaten eggs
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup raisins
  • 2 tablespoons all-purpose flour
  • Cookie Glaze or sugar (optional) (see recipe below)
  • Shortening or cooking oil for deep-fat frying

Directions

  1. In a small bowl, combine the warm water, yeast, and sugar. Let mixture stand about 5 minutes or until bubbly.
  2. In a saucepan, heat milk and butter or margarine until butter is almost melted.
  3. In a large mixing bowl, beat yeast mixture, milk mixture, eggs, 1-3/4 cups flour, and salt for 3 minutes.
  4. Rinse raisins with water. Drain. Toss raisins with the 2 tablespoons flour. Beat into the dough. (Dough will be sticky.)
  5. Make the Cookie Glaze, if desired.
  6. To fry, drop dough by heaping teaspoons, 5 or 6 at a time, into deep, hot fat (365 degree F). Fry for 2 minutes, turning once.
  7. Drain on paper towels. Coat with glaze or sugar while warm. Makes 48 cookies.
